I was walking into a dark forest being chased by a huge herd of elephants, I was running my fastest until I came across a waterfall. My only option was to jump before the elephants caught onto me, as I jumped I went deep into the water losing air. As I struggled I was able to swim onto the shore where I stood upon a statue of my father.

My sense is the dream is focusing on memories or experiences that have been stored in your unconscious and are now trying/needing to come to a conscious recognition. These emotional aspects are 'chasing' you and are wanting/needing to be let out. The statue of your father may be saying something about your relationship with him. A statue is inflexible. But it can also be something you admire. Which fits your father?
